Slow mornings are the best. The days you throw your routine out and just let time drift along. This I have to admit does not happen very often but when it does it feels so good. I try and have a slow day usually at the weekend once a week, a morning where I make no plans. All I want to do is potter, make breakfast, listen to the radio, read the papers, arrange flowers or simply have a walk by the sea.
Breakfast is always an important meal of the day but one that can often be overlooked. Over the years my granola recipe has changed depending on my larder ingredients. This recipe is one of my favourites whole and ground almonds give a depth of flavour, accompanied with raspberries, greek yoghurt and a squeeze of honey or two. Life is sweet.
Recipe: Granola with almonds whole and ground
Ingredients
450 g (1lb) rolled oats
100 g (3½oz) whole almonds
75 g (3oz) pecans, roughly chopped
75 g (3oz) pumpkin seeds
2 tbsp ground almonds
1 tsp ground cinnamon
125 g (4oz) runny honey
50 ml (2fl oz) vegetable oil
Finely grated zest of 1 orange
1 tsp. vanilla extract
Preheat oven to 160ºC (140ºC fan) mark 4. In a large bowl, mix together the oats, cranberries, pecans, pumpkin seeds and cinnamon. Set aside.
Method
Put the honey and oil into a small pan and heat gently until very liquid, about 30sec. Stir in the orange zest and vanilla, then pour over the oat mixture and mix thoroughly.
Divide the mixture between two large baking trays and spread out evenly. Bake for 20-30min, stirring once, until golden and toasted. Leave to cool completely before bagging or storing in an airtight container.
A change is in the air autumn days have arrived and breakfast becomes very much fuel for the day. I love roasting plums gently with vanilla, bay and demerara, sweet, glossy and rich in colour they sit perfectly on my morning porridge. My blackberry compote or rhubarb and vanilla works deliciously well too, sometimes porridge simply on its own is all I need. I grew up in the days of the Ready Brek ads and the idea you would go to school with a red glow of course now I would find ready brek far too sweet but the fun of making the well in the centre and then slowly adding the milk to watch it thicken was magic.
RECIPE: Porridge, gold top milk, demerara, and roasted plums with bay and vanilla
Ingredients
160g organic porridge oats
600ml milk (gold top / blue top)
Roast plums
6 plums
1 split vanilla pod
4 tbsp demerara sugar
1 bay leaf
serves 4
Pre heat oven to 200’C
Method
Halve the plums and remove the stones. Fit them into a small roasting tin cut side up, split the vanilla pod, scrape out the seeds add 100ml water and sprinkle over the sugar.
Roast for 25- 30 minutes until soft but holding their shape. Place the oats and milk in a pan over a medium heat, add a pinch of sea salt.
