Cornish Splits, Raspberry Jam, Clotted cream
*If you do not get cream on your nose when eat them you do not have enough cream on your split*
HIGH days, holidays and early morning walks to the bakery for the best tea time treats. Nothing evokes more memories as a child for me in Cornwall as the quintessential cream tea. Delicious, comforting and nostalgic there is something really quite civilised about this wonderful tradition. I am rather fond of a split lighter than a scone and slightly sweeter.
Splits are so worth making yourself - a yeast bun that is super easy to make all you need is a little time. Jam of course can be any jam you love raspberry, blackcurrant or perhaps blackberry are my favourites. What is your favourite jam to eat with a split or scone? Cornish clotted cream is of course the star of the show so indulgent, smooth and creamy. One is never enough.
A revival of the split is required (immediately) I love them and of course it goes without saying JAM FIRST.
