Here I am as we head into February and I have a delicious Beef Stew for you with carrots, parsnips and butternut squash topped with lemon zest and rosemary adding a zesty fragrance. Cook in the oven low and slow for 3-4 hours. One pot of comfort with a glass or two of red wine.
